Our Rum.
Release 1: 4-year-old small batch Jamaican rum

Our first release is now available at bars, restaurants and retailers in Louisville, Northern Kentucky and soon to other national markets. Enjoy straight, or use in classic cocktails like the Daiquiri or Rum Old Fashioned.

Aromatics: rich banana | citrus | vanilla | allspice
Palate: banana | oak | butterscotch | dark fruit

Hemingway Daiquiri

1.5 oz Rolling Fork Jamaican Rum | 0.75 oz. lime juice |0.25 oz. | grapefruit juice | 0.25 oz maraschino liqueur | Shake ingredients with ice, strain into a chilled glass and garnish with maraschino cherry and grapefruit peel.

Sugar cane

Rum begins with sugar cane, a tropical grass plant grown in the Caribbean. Our Jamaican rum is made from molasses, a byproduct of sugar cane.

Distillation   Pot still distillation produces full-bodied, high-proof rums in small batches. We prefer this method over column still because it gives the distiller more control.

Fermentation

Sugar is converted by proprietary or wild yeast into alcohol. This process can last up to 15 days in a mash tun, often adding pungent (yet desirable) fruity qualities.

Distillation

Pot still distillation produces full-bodied, high-proof rums in small batches. We prefer this method over column still because it gives the distiller more control.

Aging

After distillation, clear rum is often placed in used oak barrels to develop color and flavor. Our Jamaican rum was aged four years.

As independent bottlers, we deliver adventure to spirit enthusiasts through the history, complexity, and variety of the finest rums. We founded Rolling Fork Spirits in honor of Kentucky's famed Rolling Fork Distillery, established 1788. To honor this distilling legacy, we bring the finest rums (without additives) made around the globe to Kentucky, the capital of American distilling. Through blending and finishing, we craft rums that adhere to our motto: no finer spirits can be made.
